3 go-to quick meal ideas for lazy summer days

One way I’ve kept the kitchen cool this summer is to cook with eggs. I can make quick, healthy meals everyone can enjoy like these 3 easy ideas:

  1. “Breakfast” for dinner. French toast topped with fresh Ontario peach slices,  blueberries and slivered almonds. Serve with yogurt smoothies.
  2. Make-your-own pizza omelettes. Here’s how: When egg is almost set on surface but still looks moist, spread pizza sauce over top. Sprinkle toppings and cheese over sauce. Place lid on skillet and cook for 1 to 2 minutes to melt cheese. Slide onto serving plate. Serve with tossed salad and whole grain crispy rolls.
  3. Make-your-own egg salad subs. For kids, I find whole wheat hot dog buns work great. I always keep hard-cooked eggs ready to go in the fridge. They keep for up to a week.  Topping ideas: shredded carrots, chopped lettuce, thinly sliced mushrooms, red or yellow or green pepper. Serve with raw veggies and dip. Baby carrots, grape tomatoes and sugar snap peas are convenient and healthy.
