Cauliflower Ham And Parmesan FrittataI recently picked up this recipe card at one of my local grocery stores (Real Canadian Superstore). It was hanging on a display board near the entrance to the store along with other recipes and some money-saving coupons. There are a few more recipes in this Feed Your Family series. Of course I was drawn to the one that used eggs! :) The recipe found on the back of the card is below (with a few minor recipe-writing tweaks from me!). Feel free to sub in milk for the cream, if you wish. For those not familiar with the President's Choice (PC) brand of products, they are sold at stores within the Loblaws chain.

Cauliflower Ham and Parmesan Frittata (Makes 5 servings) Using a nonstick frying pan lets you get away with using less fat to cook the frittata. All eggs are a complete source of protein, but omega eggs also benefit heart health and brain development. 2 tbsp (25 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed 1 tbsp (15 mL) PC Country Churned Butter (unsalted) 1 small head cauliflower, trimmed and cut in small florets 9 PC Blue Menu Oméga-3 Eggs (large) 1/3 cup (75 mL) 10% cream 3 oz (90 g) sliced Black Forest ham, cut in strips 1/3 cup (75 mL) PC 100% Parmesan Grated Cheese 3 tbsp (45 mL) chopped fresh parsley ½ tsp (2 mL) salt ¼ tsp (1 mL) freshly ground black pepper ¼ tsp (1 mL) PC Fresh Frozen Chopped Garlic Preheat broiler to high. In a 10-inch (25 cm) ovenproof nonstick frying pan, heat olive oil and butter over medium heat until butter melts. Cook cauliflower, stirring occasionally, until browned and almost cooked through, about 12 to 15 minutes. Meanwhile, in a bowl, whisk together eggs, cream, ham, Parmesan, parsley, salt and pepper. Stir garlic into cauliflower; cook for 1 minute longer, stirring. Pour egg mixture over cauliflower. Cover pan and turn heat to low. Cook until top is almost set and frittata is golden brown on bottom, about 12 to 15 minutes. Place 6 inches (15 cm) under broiler. Broil until eggs are set and starting to brown, about 3 or 4 minutes. Slide rubber spatula around outer edge of frittata and slide onto cutting broad. Cut into five wedges.
