Preheat oven to 375’F. Grease muffin tins with cooking spray.
Press a slice of black forest ham into each muffin cup.
Gently crack an egg into a small measuring cup and carefully pour into the ham slice in the muffin cup. Sprinkle with salt and pepper.
Bake black forest ham cups in preheated oven for ~15-18 minutes until eggs are set and cooked through. Allow to set for a few minutes before removing from the muffin pan.
While egg cups are baking, wash and slice green onions into thin rings for garnishing.
Garnish with a sprinkling of sliced green onion rings on each egg muffin cup.
Serve with multigrain toast and fresh fruit for a balanced breakfast or lunch. For additional protein in each serving, sprinkle with your favourite shredded cheese on the top of each egg before baking. ENJOY!
