Welcome to the September installment of Egg Essentials with Dietitian Hana. With school back in session, busy mornings, going back to routines and picky eaters can turn lunch packing into a real challenge. Eggs come to the rescue because they are quick to prepare, affordable, packed with protein and very adaptable. Try these simple egg ideas, that are easy to make and are perfect for little hands, to keep your child fueled through the school day.
1. Hard-Boiled Egg Dippers
What to do: Peel and quarter hard-boiled eggs, then pack alongside small containers of dips like Greek yogurt mixed with a bit of paprika, hummus, ranch-style yogurt dip or even salsa. Add mini pitas and sliced veggies and you’ve got a balanced lunch for your child.
Why it works: Kids love hands-on dipping. It adds familiar flavours without extra fuss, and the protein helps them stay focused until snack time.
2. Mini Frittatas
What to do: Whisk together eggs, finely chopped vegetables such as spinach, tomato or zucchini and shredded cheese. Pour the mixture into a greased muffin tin and bake at 180 °C for about 15 minutes. Let cool then pack in reusable silicone cups. For another version, try these Muffin Tin Frittatas. To build a balanced school lunch, pair with a side of fresh fruit, and a handful of whole-grain crackers.
Why it works: These bite-sized frittatas are pre-portioned and include veggies in a familiar format. Serve them cold or at room temperature for a no-heat, nutrient-dense lunch.
3. Egg Salad Pinwheels
What to do: Mash chopped hard-boiled egg with a spoonful of Greek yogurt, a bit of mustard and a pinch of salt. Spread the mixture on a tortilla, roll tightly, then slice into pinwheels. Add diced apple or cucumber for extra crunch if you like.
Why it works: Pinwheels are easy to pick up and eat, with minimal mess. You can customize the filling to suit your child’s tastes, and the spiral shape is a hit.
4. Egg and Cheese Quesadilla Triangles
What to do: Scramble an egg until just set, then layer it on a small tortilla with shredded cheese. Fold the tortilla in half and toast briefly in a skillet until the cheese melts. Cut into wedges. For a more adventurous take, try this Crispy Breakfast Quesadillas. To create a balanced school lunch, add sliced fruit and/or veggies.
Why it works: Quesadillas are a lunchbox classic scaled down for kids. The crispy tortilla and gooey cheese pair perfectly with tender egg, delivering protein and comfort in every bite.
