  • 3 eggs
  • 125 ml all-purpose flour
  • 125 ml milk
  • 30 ml sugar
  • 5 ml vanilla
  • icing sugar
  • berries
  • vanilla yogurt or whipped cream
Eggs make this favourite recipe puff up dramatically while baking. Top with fruit and serve with yogurt or whipped cream for an attractive and delicious dish for breakfast or brunch.

Instructions

Whisk eggs with flour in a bowl until smooth. Gradually whisk in milk, then whisk in sugar and vanilla.

Pour mixture into a greased medium-sized skillet (with straight sides and heat-proof handle) or an 8-inch (20 cm) cake pan.

Bake in a preheated 425°F (220°C) oven until puffed and golden brown, about 20 minutes.

Dust with icing sugar. Mound berries in the centre. Serve immediately with yogurt or whipped cream.
