Kachapuri (Georgian Cheese Bread)

  • 650 to 700 g store-bought pizza dough
  • oil spray
  • 5 eggs, divided
  • 15 ml everything bagel seasoning
  • 250 ml shredded old Cheddar cheese
  • 250 ml shredded smoked Gouda cheese
  • 250 g cream cheese, softened
  • 30 ml garlic butter or butter
  • 15 ml each chopped fresh sage and rosemary
  • salt and pepper to taste
Store-bought pizza dough makes easy prep of this comforting Georgian cheese-filled bread. Enjoy it for any meal of the day along with a crisp green salad dressed with a sharp vinaigrette.

Instructions

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

Cut pizza dough into four equal pieces. Very lightly spray work surface with oil and roll out one piece of pizza dough into a 10-inch (25 cm) circle. With fingers, roll up along bottom edge of circle to form a crust edge about ¾ inch (2 cm) thick, pinching to hold. Repeat with top side of circle to form a boat shape. Twist together where the ends meet. Transfer dough to baking sheet and repeat steps with remaining 3 pieces of pizza dough.

In a small bowl, whisk 1 of the eggs until blended; brush over edges of dough. Sprinkle edges evenly with everything bagel seasoning.

In a medium bowl, combine old Cheddar, smoked Gouda and cream cheese until well mixed. Divide equally between the four doughs and gently spread. Bake for 15 minutes until crust starts to brown.

Remove from oven and make a well in the center of each bread with a spatula. Crack an egg into each well. Bake for 10 to 15 minutes until crust is golden and eggs are cooked to desired doneness.

Dot each bread with garlic butter, dividing equally, and sprinkle with sage and rosemary. Season with salt and pepper to taste.
