Egg Calzone

Description

Pizza isn’t just for dinner anymore! This Egg Calzone takes all the wonderful, familiar flavours of pizza and folds them into an omelette “calzone,” making this dish an instant hit with kids and adults alike. Serve additional pizza sauce on the side for dipping.

Instructions

Preheat oven to 375°F (190⁰C).

In a large measuring cup, whisk eggs, milk and Italian seasoning; set aside.

In a 10-inch (25 cm) oven-proof skillet, heat half of the oil over medium heat. Pour half of the egg mixture (about ¾ cup or 175 mL) into skillet.  As the egg cooks, gently lift the edges, tilting the pan to allow uncooked egg to flow into empty spaces; cover with lid to almost set the top. Remove from heat.  Spread 2 tbsp (30 mL) of the pizza sauce over eggs.  Top one side of the calzone with half of the pepperoni, tomatoes, green peppers and cheese.

Place skillet in oven and bake 8 minutes or until cheese is melted.

Remove from oven, and gently slide calzone onto plate. Top with basil before folding in half to cover filling.  Repeat with remaining ingredients. Serve warm.

Tip: Customize this calzone by adding additional pizza toppings like sliced red onion, mushrooms, olives or bacon.
