In a food processor, combine eggs, pressed cottage cheese, Dijon, seasoning salt, garlic powder and pepper. Pulse until eggs are diced and mixture holds together when squeezed.
On a plate, combine chopped nuts and fresh herbs. On another plate, combine bacon and Cheddar.
Scoop egg mixture into 1½ tbsp (22 ml) mounds. Roll into balls using lightly wet hands. Roll balls in toppings to coat, as desired. Serve immediately or store refrigerated in an airtight container for up to 4 days.
