Step 1:
In a large bowl, beat egg whites and lemon juice with an electric mixer until frothy.
Step 2:
Add icing sugar to egg whites and mix on low until blended. Increase speed to medium-low and beat for 3 to 5 minutes, until mixture is uniform and glossy.
Step 3:
Divide icing into bowls, one bowl for each colour you plan to make. Add food colouring for desired colour and mix completely.
Step 4:
Add water, little by little, if you are looking to create a thinner consistency for your icing.
