In a medium bowl, mash eggs with a fork or pastry blender. Add seasonings, celery, mayonnaise to taste, lemon juice and green onion; mix well. Divide egg salad among tortillas. Roll and slice in half. Serve with a variety of vegetable sticks.
Change it Up: Spoon into a pita pocket or serve on toasted whole grain bread lined with lettuce or spinach. For a tasty and quick snack idea, spoon on crackers and sprinkle with paprika.
