Egg Salad

  • 6 hard cooked eggs, peeled
  • 50 ml chopped celery
  • 30 ml mayonnaise
  • 5 ml fresh lemon juice
  • 1 green onion, thinly sliced
  • 4 small whole wheat flour tortillas
  • 10 ml dried dill
  • 5 ml dried parsley
  • 2 ml onion powder
  • 2 ml dry mustard
This recipe takes a much loved classic and adds a modern twist. Perfect for picnics and lunch boxes alike, this is sure to become a hit with your family!

Instructions

In a medium bowl, mash eggs with a fork or pastry blender. Add seasonings, celery, mayonnaise to taste, lemon juice and green onion; mix well. Divide egg salad among tortillas. Roll and slice in half. Serve with a variety of vegetable sticks.

Change it Up: Spoon into a pita pocket or serve on toasted whole grain bread lined with lettuce or spinach. For a tasty and quick snack idea, spoon on crackers and sprinkle with paprika.
