Blueberry Pancakes like none you've tasted!

Now these are unusual pancakes!

As you can see from the photo, they're not the typical thick fluffy pancakes served in a stack with butter melting over the top and maple syrup dripping down the sides. They're also not like thin crepes you roll up or wrap around sweet or savory fillings. Instead, these pancakes, made with cottage cheese and lots of eggs, are tender and pliable enough to fold over a fruit sauce.
