Ham and Cheese Wrap Recipe

I've been staring at this recipe all month: the March offering in the 2011 Good Things Grow in Ontario calendar created by Foodland Ontario. The calendar hangs in my office on the bulletin board just behind my computer. So I see it. Regularly. Before it's time to flip the page and Breakfast Ham 'n' Cheese Egg Wrap gets tucked behind April, May, June and the rest of 2011, I decided to give the recipe a try. It's good! And easy. And versatile. If you don't have one of the veggies called for in the recipe, simply substitute another vegetable or bump up the quantity of one of the other ingredients. And, you can use whatever kind of cheese you have on hand. The recipe makes 4 wraps. I was just cooking for myself so I made a quarter of the recipe and cooked the ingredients in an 8-inch (20 cm) frying pan. Breakfast Ham 'n' Cheese Egg Wrap Makes 4 servings 4 tsp Ontario Butter 1/2 cup each finely chopped Ontario Onion and Ontario Greenhouse Sweet Peppers (red, orange or yellow) 8 Ontario Eggs 1/2 cup diced Ontario Ham 1/2 cup shredded Ontario Mild Cheddar Cheese 1 Ontario Greenhouse Tomato, diced 4 large whole wheat flour tortillas In a 10-inch non-stick skillet, melt butter over medium heat. Add onion and peppers; sauté for 4 minutes or until softened. In a large bowl, whisk eggs; stir in ham and pour into skillet. With spatula, gently push cooked egg to the centre of the skillet and allow uncooked egg to flow underneath (tipping skillet if necessary). Cook until eggs are set but still creamy and bottom is firm. Sprinkle with cheese; cover with lid and cook until cheese is melted. Slice into 4 wedges and place flat on each tortilla.
